And this wasn't just a demo!
After a few welcome drinks and mingling, we ALL rolled up our sleeves, washed our hands, and broke up into small groups to prepare our evening's meal, which featured a number of holiday dishes made with pistachios.
I was put on sweet potato duty, preparing the dish that actually ended up being one of my favorites of the night. Roasted sweet potato wedges with crunchy salt pistachios, tangy goat cheese, and a sweet pomegranate juice glaze.
It was messy, but delicious work.
The main course was a stuffed turkey roulade filled with apples and topped with an amazing pistachio pesto sauce. That's me above grabbing seconds.
(Or maybe it was thirds? No shame.)
Along with the turkey, we enjoyed a bunch of sides, including Roasted Sweet Potato Wedges with Wonderful Pistachios, Goat Cheese & Pomegranate Glaze.

We also made and ate Spiced Butternut Squash and an awesome (or Wonderful?) Pistachio and Barley Salad.
For dessert, we got to choose from a bunch of sweet treats, including Pistachio Brownie Cookies, Pistachio Chocolate Palletes (aka chocolate bark), and Pistachio and Cherry Popcorn Balls.
The holiday season is always incredible busy for a lot of us, so I really appreciated the opportunity to take a few hours to come together and just enjoy good food, and even better company.
