That is, assuming you already have the ingredients in your fridge. If not, pull out this week's grocery list, because I've got a few things you're going to want to add to it!
I am working with Al Fresco this month to share a few easy dinner recipes that will save your life on busy weeknights. The secret is to stock up on a few packages of Al Fresco Fully Cooked Chicken Sausages.
I've been buying Al Fresco chicken sausages (as well as a few of their other products) every time I shop for a few years now, and I can't tell you how many times I sighed with relief upon opening the fridge and spotting them sitting there all ready to heat and serve. In fact, when they reached out asking me if I'd like to work with them, I jumped at the chance to share a product I already knew and loved.
Made with lean chicken breasts and a variety of herbs, spices, and other fresh ingredients, these chicken sausages can be added to all your favorite dinnertime staples. Starting with a package of these cuts down dinner cooking time by about 15-20 minutes and makes clean-up so much quicker and easier.
Chicken sausages are amazing in these tacos (of course!), but I also often serve them simply browned in a hot skillet along with sauteed greens, roasted vegetables, or even on top of a salad. You can toss them with your fave pasta, add them to an omelet for "breakfast for dinner," or just tuck them into a roll with sauteed peppers. I used the smokey, spicy Smoked Andouille Chicken Sausage flavor for this easy taco recipe, but you could swap in your favorite flavor. Try these with the Roasted Garlic, Sundried Tomato, or Spicy Jalapeno flavors instead.
The Mango Pineapple Salsa I used to top these chicken sausage tacos is also super simple to make--basically just mix and serve! You can make this salsa a few days in advance, and note that the leftovers are pretty fabulous with chips as a dip, so you may want to double the batch for easy snacks all week long.
I serve these tacos on warm corn tortillas (pop them onto a hot skillet or even directly over the flame on your stove for a few seconds on each side), a drizzle of sour cream, and some extra limes and cilantro. Feel free to dress these tacos up with your own favorite ingredients--crumbled queso fresco? Pickled onions? Hot sauce? You can't go wrong!
If you want an even easier idea, serve the tortillas, chicken sausage, salsa, and toppings in individual bowls and let the whole family DIY their own perfect taco. Doesn't get any better than that!!
Andouille Chicken Sausage Tacos with Mango Pineapple Salsa
Serves 4-6
Prep time: 10 minutes
Cook time: 5 minutes
Ingredients
Olive oil or vegetable oil
1 package Al Fresco Smoked Andouille Chicken Sausage
For the salsa
1 medium red onion, finely diced
1 large ripe mango, diced into 1/2" cubes (about 2 cups)
2 cups finely diced pineapple (fresh, frozen & thawed, or canned)
2 red, yellow or orange bell peppers, finely diced
1 jalapeño pepper, seeded and finely diced
1/4 cup freshly squeezed lime juice (from about 2-3 limes)
kosher salt
1 small handful fresh cilantro, finely chopped
For serving: sour cream or Greek yogurt, soft corn tortillas, limes, cilantro
Directions
Remove sausage from package and dice into 1/2” cubes. Set aside.
In a large bowl, combine the diced onion, mango, pineapple, jalapeño, bell pepper, lime juice, and cilantro. Season generously with a few pinches of kosher salt. Toss well until evenly distributed. Taste and add more salt as needed. Set aside.
Heat a couple tablespoons of oil in a large skillet over medium-high heat. Add the diced sausage and saute until heated through and slightly crisp on all sides (about 3-5 minutes).
Divide sausage onto warmed tortillas, and top with Mango Pineapple Salsa. Drizzle on sour cream, and garnish with cilantro. Serve with additional lime wedges on the side.
